Tasting notes
This wine boasts a rich and complex aroma of ripe red fruits, spices and a hint of vanilla. On the palate, this wine is full-bodied and well-structured, with smooth tannins and a long, intense finish.
Winemaking
From 25 year old vines on clay-limestone soil at about 160 metres above sea level. Harvested by hand, in small baskets of 20 kg each ones and grapes selection in the
wine cellar. Long fermentation-maceration for about 30 days at controlled temperature 25°; malolactic fermentation and following refinement of only first press wine in stainless steel temperature-controlled vats in order to enhance its original characteristics.
Food pairings
Cured meats, Sardinian Pecorino cheese. Roast pork or lamb with myrtle and juniper berries, beef with sauce and wine.
