Vieux Télégraphe’s second-label Châteauneuf-duPape red, made with the grapes of young vines under
30 years old, plus older parcels not located
on the Plateaux of La Crau or Piedlong.
Tasting notes
Lots of red fruits including raspberry and cherry, lavender and garrigue fine tannins with a hint of white pepper on the finish.
Winemaking
Grapes are hand-picked and destemmed, followed by
25-30 days’ traditional fermentation in temperature controlled vats. Pneumatic pressing, then systematic malolactic fermentation follows. Matured for 15-16 months in French oak. Bottled without filtration or fining,
released at 18 months.
Food pairings
Rare meat especially beef - e.g. a chargrilled steak (rare meat softens the effect of big tannins) Slow cooked but not heavily sauced meat (lamb and pork as well as beef).
