Background
Château de Tracy's philosophy focuses on the expression of terroir and the well-being of the plant. "We grow the Sauvignon, the unique grape variety of the Pouilly-Fumé appellation, in its colder latitude and thus, the most expressive." The exceptional soils (limestone and flint) provide minerality and the perfect growing environment for the vines.
Tasting notes
Nose of lemon followed by exotic fruit and a mineral, spicy background. On the palate, flavours of exotic fruit and citrus dominate. The finish is long and structured and reveals notes of lime and grapefruit peel.
Winemaking
The vineyards are on gentle slopes overlooking the Loire with a south-west exposure. The wine is vinified in a mix of 600hl concrete and stainless steel vats and the lees are regularly stirred to add weight and richness to the wines.

Poached lobster, seared halibut in beurre noisette, grilled prawns.
