Background
Florian Andre, a young winemaker from Tavel, took over the vineyard in 2003 and continues the Holy family’s winemaking tradition. In 2009, he began to convert the entire vineyards to an organic agriculture and began producing some exceptional organic wines, including Tavel, Lirac, Côtes du Rhône and Châteauneuf du Pape.
Tasting notes
Ripe red fruit, fine quality tannins, velvety mouthfeel, and toasted oak on the finish.
Winemaking
Hand harvested. Fruit is transported to the winery in
small crates and handled with great care. Grapes are destemmed, crushed and cold-soaked for 12-48 hours with the cap submerged. Alcoholic fermentation is started by native yeasts and continues at moderate temperatures (24-28° C) or 25 days. Aged in concrete tanks and new 500-litre barrels for 9-12 months (part of the blend only).
Food pairings
Chargrilled red meats such as lamb, beef and venison. Works wonderfully with roasted game and mashed potatoes.
