Background
The estate was founded in 1770 and since 1984 has been run by Frédéric et Elisabeth Barillot. The limestone soils give very fruit driven wines with a hint of flint, typical of the Pouilly Fumé appellation.
Tasting notes
Aromas of citrus fruits (hints of lemon and grapefruit) with developing floral notes of acacia and lily. The refined palate shows freshness and gives a real sense of place. The fruit is gentle but ever-present, and the flinty mineral character so typical of this region gives a definition to this wine, whilst a delightful roundness develops on the finish.
Winemaking
Vinified in thermo-regulated stainless steel tanks, the wines ferment at progressive temperatures (15°/20°) which allows them to fully develop their aromas. Part of the final blend is vinified in egg shaped tanks, heightening the aromatics even more.

Classic pairings include fish, seafood, and of course goat's cheese - another famous product from the region!
