Background
The vineyard of Domaine La Barbotaine is about 15 hectares in size. It consists of different parcels of land on the hills of Crézancy, varying in terms of exposition and terroir. The Sauvignon blanc makes up 80% of the vineyard and grows on soil consisting of deep calk and lime, with abundant caillotes - little white stones typical for the region.
Tasting notes
Classic lemon, cut grass and fresh asparagus nose, fresh high acidity and great mineral elegance makes this low volume, family made, hand cared for Sancerre stand out from the crowd.
Winemaking
Stainless steel only. No use of oak.
Food pairings
Gazpacho, young goats cheese salads, sushi and sashimi, seafood-based steamed and fried dim sum and smoked salmon.
