Tasting notes
Flavours of ripe red berries, cassis, and a touch of slate minerality. The finish is long and elegant showing velvety tannins and vibrant acidity.
Winemaking
After a very rigorous sorting in the vineyard, grapes are destemmed in the winery. The unspoiled fruits go through a cold maceration. Fermentation then occurs under temperature control at more or less fifteen degrees Celsius for three to five weeks.
The maturation occurs in a very traditional way, in oak barrels.
Bottled at the Domain, after twelve to eighteen months of maturation.
Food pairings
Lean red meat such as venison, fillet steak and lamb. Mature hard cheeses.
