Background
Bodegas Martín Códax was founded in 1985 and was named after the most known Galician troubadour whose medieval poems, the oldest of Galician-Portuguese language with the original music, are preserved. In the poems, the troubadour sings to love and to the sea of our coastline.
Tasting notes
Highly aromatic, with notes of grapefurit, apricot and orange sorbet. On the palate, it brims with zesty herbs and spices, alongside more rounded bakery and white chocolate notes. In texture, it is broad, rounded and silky, with well-integrated acidity and a fresh finish. This has good potential for further ageing.
Winemaking
The grapes selected for Vindel are hand-picked 20 days after the beginning of the harvest. A criomaceration at -4/-8ºC is carried out during 2 days, then a cold maceration in press seeking to maximise all the aromas extracted. Fermentation is carried out at 17 ºC in stainless steel and in new French oak and light-toasted barrels of 225 L. After finishing the fermentation, the wine goes for 4 months of bâtonnage in oak, do the coupage afterwards and age for at least a year in stainless steel. Then we stabilise, filter and bottle.

Pairs well with white meats, mild sauces, oily fish.
