Background
Situated on a hillside in the north of the Rully appellation, two plots growing pinot noir, one old, planted in 1985, and one young, planted in 2016. This hillside has an eastern exposure and is made up of gravel and clay soils.
Tasting notes
Warm red berries, freshness from the cool acidity. Some earthiness on the finish. Good roundness and body to the wine.
Winemaking
Manual harvesting, sorting and destemming. Gravity vatting cold maceration for between 3 to 6 days, Then alcoholic fermentation vatting for 2 to 3 weeks.
Matured in oak barrels, 15% of which are new, for 12 months before fining an bottling.

Seared Filet Mignon with boulangere potatoes and a red wine jus.
