Background

Giovanni, Gian Luca and Pietro are proud sons of Veneto. These three friends grew up together, in the fields and bars around Treviso, until life took them to follow separate paths as far afield as London, New York and Hong Kong. In 2011, the vision for FIOL brought them back together to express their character and passion in a sparkling wine that represents Italian and Venetian love for life.

Tasting notes

This stylish Prosecco has a lemon colour with a bouquet reminiscent of wisteria flowers, acacia and ripe apple. Fresh, lively and appealing with slightly sweeter notes on the palate.

Winemaking

After soft pressing, the grapes are removed from skins and fermented with selected yeasts at a controlled temperature of 16-18°C. The Charmat method then takes place in an autoclave for 30 days, and the juice remains in contact with yeast for several weeks. It refines for a few months in bottle to enhance aromaticity.

Food pairings

Fresh, elegant and versatile, this is a Prosecco that can be enjoyed across many occasions - but pairs particularly well with shellfish canapes and cured Italian meats.
